Baked Wheat Berry Oatmeal

Sunday morning breakfasts are sacred in our house. Most Sundays I wake up to the music of laughter as the farm boys and Kevin whip together something special for breakfast (yep, I hit the jackpot with this man!).

Then there are those other Sundays when Kevin has to feed cows first thing and it is up to me to scrape together breakfast . When I’m half awake and not finished with my first cup of coffee, this is my go-to breakfast recipe. It tastes great, is full of whole grains, and requires very little effort, giving me time to get the farm boys and myself presentable for church.

Recipe:

Adapted from Baked Oatmeal from Amish Friends Cookbook and Amish Baked Oatmeal from Taste of Home Winning Recipes.

Ingredients:

  • 1 egg

  • 1/4 cup Sugar

  • 1/4 cup Brown Sugar

  • 1/4 cup Butter, melted

  • 1 tsp Vanilla Extract

  • 1/2 cup Cooked Wheat Berries (get the instant pot recipe here)

  • 1 cup Old Fashioned Oats

  • 1/2 cup Milk

  • 1 tsp Baking Powder

  • 3/4 tsp of Salt

  • Warm milk and fruit for serving

Directions:

  1. In a large bowl, combine first 9 ingredients and mix well.

  2. Spread evenly in a large greased 9”x13” baking pan.

  3. Bake at 350 for 25-30 minutes or until edges are golden brown.

  4. Serve immediately in bowls with warm milk and fruit. Enjoy!

*Note: If you want to double the recipe, double all ingredients and bake in a greased 9”x13” baking pan for 30-35 minutes or until edges are golden brown.

How to Make Baked Wheat Berry Oatmeal:

If your wheat berries are already cooked, this recipe only takes minutes to put together. I like to keep cooked wheat berries on hand for this breakfast oatmeal as well as for granola, soups and salads. STEP 1:

Add first 9 ingredients to a large bowl and mix well (hint… melt your butter first and let it sit while you add the other ingredients. You don’t want scrambled eggs!).

STEP 2:

Spread mixture evenly into a greased 9” x 13” baking dish. It will look thin! Don’t worry. It gives it a little more of a cereal texture and less of a cookie bar texture.

STEP 3:

Bake at 350 degrees for 25-30 minutes or until edges are golden brown.

STEP 4:

Immediately spoon baked oatmeal into bowls. Pour warm milk into bowls and top with fresh fruit.

This recipe makes approximately 4-6 servings (depends on how hungry you are... we get 4 servings out of it). It tastes best if used immediately. If you have extra, store it in the fridge for 1-2 days (about day 2 the wheat berries start to dry out).
