Baked Donuts Using Freshly-Milled Flour

Last year I posted a picture on Instagram of donuts I baked for one of our farmboy’s class. They were pretty, they were covered with sprinkles, and the best part, they were made from freshly-milled flour. I had so many requests for the recipe, and I promised to share, but then realized I have never made the donuts the same way more than once.

Here we are (almost) a year later, and I have finally settled on my favorite version of these donuts. These donuts are oven baked, which gives them a cake-like texture and slightly crispy edges. Honestly, I have a hard time eating store-bought donuts after making these!

Recipe:

Adapted for freshly-milled flour from Baked Doughnuts Three Ways from King Arthur Baking Company.

Ingredients:

  • 4 tbsp of Unsalted Butter, melted

  • 1/4 cup oil (I used olive or canola oil)

  • 1/4 cup Sugar

  • 1/3 cup Brown Sugar, packed

  • 2 Eggs

  • 1/2 tsp Baking Powder

  • 1/4 tsp Baking Soda

  • 1/2 tsp Nutmeg

  • 3/4 tsp Salt

  • 1 tsp Vanilla Extract

  • 3 cups Freshly-Milled Soft White Wheat Flour (get our wheat berries here)

  • 1 cup Milk

Directions:

  1. In a large bowl, beat together the first 4 ingredients until smooth.

  2. Add eggs and continue to beat until smooth.

  3. Stir in baking powder, baking soda, nutmeg, salt and vanilla.

  4. Alternately, add flour and milk to the mixture. I add 1 cup flour, 1/2 cup milk, 1 cup flour, 1/2 cup milk, ending with 1 cup flour. Make sure everything is combined between flour/milk additions.

  5. Let the batter sit while preheating your oven to 425 degrees Farenheit and greasing your donut pan.

  6. Spoon batter into donut wells until they’re about 2/3 full (this really depends on how tall the center is on each donut well).

  7. Bake for 10 minutes. After removing from the oven, all the donuts to sit in the pan for 5 to 7 minutes before turning out onto a cooling rack.

This recipe makes approximately 12-14 donuts. Our favorite way to decorate them is with a sugar glaze and sprinkles (sprinkles make everything fun!). However, coating them in cinnamon-sugar and powdered sugar are winners too. I also take my ones that don’t have the donut hole (I filled the well a little too much), and add a spoonful of homemade jam to the center… instant jelly-filled donut!
